Slice the potatoes and onion thinly. Whisk the eggs with salt in a large bowl.

• 600 gPOTATO, PEELED
• 150 gONION
• 330 gEGG WITHOUT SHELL
• 12.5 gOLIVE OIL
• 3 gSALT, AVERAGE

Method

1. Slice the potatoes and onion thinly. Whisk the eggs with salt in a large bowl.
2. Heat 25 g of oil in a non-stick pan, add the potatoes and onion and cook gently covered until tender.
3. Mix the potatoes and onion with the eggs, return to the pan and cook gently until the edges set.
4. Turn the tortilla over using a plate and finish cooking the other side.
