Eight Ethiopian sour teff flatbreads; one flatbread (about 150 g) makes a side portion for a separate main dish.
8 servingsFinal yield 1,200 g
Ingredients
- 600 gTeff, uncooked
- 1,100 gBeverages, water, tap, drinking
- 5 gSalt, table
Method
- Grind 600 g teff finely into whole-grain flour (or use 600 g whole-grain teff flour), mix with 900 g water in a non-metal bowl and cover loosely.
- Ferment the batter at room temperature for 48 hours, stirring every 24 hours. A first batch ferments spontaneously; later batches traditionally receive ersho, the sour liquid saved from the previous batter.
- Take 150 g of the batter and cook it with 200 g water for 3 minutes, stirring constantly, into a thin porridge (absit). Cool it for 5 minutes and stir it back into the batter with the salt.
- Let the batter rise again for 45 minutes until bubbles appear on the surface.
- On a hot non-stick pan over medium heat, cook eight thin flatbreads covered, 2 minutes each on one side only, until the surface is porous.
- Cover the flatbreads with a cloth to keep them flexible and serve one per portion.

Salt is calculated from sodium (g salt = mg sodium × 2.5 / 1000) and includes sodium from all ingredients.
A dash means the value is unknown, not zero.
Calculation limitations
- Nutrition is a calculated estimate, not a laboratory measurement.
- The final yield is an editorial estimate.
- Some ingredient quantities use documented estimates or household-measure assumptions.
- The number of servings is an editorial estimate (midpoint of the source range or based on the dish type and energy).
- Fibre, saturated fat and sodium of cooked ingredients are estimated from the consumed ingredient amounts; for drained ingredients, sodium is included only where the retained amount is an explicit editorial estimate.
- Some process effects could not be resolved in this calculation.
